A living elixir and the absolute, undisputed soul of an authentic Polish Christmas Eve Barszcz Wigilijny. Zakwas is created through lacto-fermentation: submerging raw, chopped beetroots in a saline brine alongside crushed garlic, allspice, bay leaves, and traditionally a crust of rye sourdough bread to kickstart the yeast. Over a week or two, lactic acid bacteria consume the natural sugars in the root, transforming the liquid into a vibrant, ruby-red, tangy tonic. It brings a profound, complex acidity and a rich, earthy depth to broths that standard vinegar simply cannot replicate.

Culinary Notes

The Boiling Ban (Crucial Rule): Because zakwas is a raw, living ferment, boiling it instantly destroys its vibrant colour, its delicate flavour profile, and its beneficial probiotics. When making Barszcz, you must add the zakwas at the very end of the cooking process, completely off the heat, allowing the residual warmth of the broth to heat the juice. If you boil the soup after adding the zakwas, the glorious ruby-red liquid will instantly turn a muddy, unappetizing brown.

The Drinking Tonic: Beyond its role as a foundational soup base, pure, chilled zakwas is traditionally drunk straight from a small glass as a powerful morning digestive tonic, particularly favoured after heavy, rich festive meals to cut through the fat and settle the stomach.

The Inoculation Trick: If you are brewing your own zakwas from scratch, adding two tablespoons of brine from a previous successful batch (or from good quality fermented dill pickles—ogórki kiszone) acts as a brilliant starter culture. It rapidly lowers the pH of the water, speeding up the fermentation and protecting your beetroots from unwanted surface mould.

The Leftover Roots: Never throw away the pale, fermented beetroot chunks once you have strained the precious liquid! While they have surrendered their colour, they remain crisp, incredibly sharp, garlicky, and deeply savoury. They are spectacular grated into a punchy winter slaw or blended into a vibrant hummus.

Apple Cider Vinegar: (Provides a raw, fruity acidity that pairs well with root vegetables, though it is much harsher on the palate than zakwas).
