Method

  1. Core and roughly shred the young cabbage. Dice the smoked bacon, slice the kiełbasa into bite-sized half-moons, and coarsely grate the carrots. Finely chop the fresh dill and set aside.

Bring the pot to a rapid simmer (allow about 5 minutes for this heat-up time), then cover with a tight-fitting lid and reduce the heat to a gentle bubble for 15 minutes.
  5. Remove the lid. Stir in the tomato purée and the remaining salt. Keep the pot uncovered and simmer for a final 5 to 10 minutes. This allows the excess liquid to evaporate, thickening the juices into a glossy, rich coating rather than a watery broth.
  6. Turn off the heat entirely. Fold through the freshly chopped dill and a heavy crack of black pepper. Let the stew rest in the pot for 10 minutes to allow the flavours to marry before serving.
