Method

  1. Slice the rustic bread into thick, even pieces, ensuring the crust is sturdy enough to hold the weight of the toppings.
  2. Smear an even, edge-to-edge layer of butter across every inch of the bread to protect the crumb from moisture.
  3. Spread a generous, rough layer of the pâté over the butter. Don't smooth it out too much; leave a bit of texture on the surface.
  4. Slice the pickled cucumbers into thin, even coins. Layer them across the pâté, overlapping them slightly so you get a hit of acidity in every single bite.
  5. Finely chop the chives using a razor-sharp knife and scatter them heavily over the top of the cucumbers. Finish with a solid crack of black pepper.
Chef's Note & Storage
Assemble and consume immediately for the best contrast in texture. If making ahead for a packed lunch, store in an airtight container in the fridge for up to 4 hours.

The Polish Kanapka

A kanapka is the absolute backbone of a proper Polish breakfast or kolacja (supper). It relies entirely on the structural integrity of good, dense bread and the harmony of rich, savoury toppings. A proper kanapka z pasztetem is the perfect balancing act: earthy, robust meat pastes cut clean through with the sharp, lactic tang of fermented cucumbers. No fuss, just brilliant ingredients doing the heavy lifting.

CHEF'S SECRET: Spread your butter right to the very edges of the crust. It acts as a waterproof barrier, preventing the acidic juices from the pickled cucumber from soaking into the crumb and turning your bread into a soggy mess.

Balance the Richness

The rich notes of a baked pork and poultry pasztet demand an assertive counterpoint. Always use proper ogórki kiszone (brine-fermented cucumbers), never the vinegar-heavy sweet varieties. The sharp snap of the pickle and the fresh, oniony heat from a heavy scatter of chives elevate this simple assembly into something properly satisfying. Use a surgically sharp knife for the chives—crushing them with a dull blade will just bruise them and muddy the flavour.
