Method

  1. Pour the water into a saucepan and bring it to a rolling boil over a high heat.
  2. Gently lower the eggs into the boiling water and set a timer for exactly 9 minutes for a set white and slightly creamy yolk.
  3. Plunge the eggs immediately into a bowl of ice water, or run them under a cold tap until completely chilled to halt the cooking process.
  4. Peel the eggs, chuck them into a mixing bowl, and bash them roughly with a fork. You want distinct chunks of egg white remaining, not a smooth purée.
  5. Finely chop the fresh chives.
  6. Tip the mayonnaise, Dijon mustard, chives, fine sea salt, and black pepper into the bowl with the eggs.
  7. Fold everything together gently until just combined, ensuring the egg chunks are coated but not completely mashed down.
  8. Taste for seasoning and adjust if necessary, then serve thickly spread on crusty bread.
