The purest essence of chocolate. Cocoa powder is the dry solid mass that remains after cacao beans have been fermented, roasted, and heavily pressed to extract their rich cocoa butter. Because almost all the fat and sugar have been removed, it delivers a massively concentrated chocolate punch. Crucially, it comes in two distinct forms that behave completely differently in the kitchen: Natural Cocoa (light, acidic, and sharp) and Dutch-Processed or Alkalised Cocoa (treated with an alkaline solution to neutralise the acid, resulting in a darker, smoother, and mellower powder).
