The vivid red soul of the Hungarian kitchen. Made by grinding dried sweet red peppers (Capsicum annuum) after removing the seeds and membranes (where the heat lives), sweet paprika is a spice of colour and flavour, not fire. Unlike chilli powder or cayenne, it offers a gentle, warming sweetness that acts as a foundation for stews. It provides the signature crimson hue to a Goulash and a rounded, fruity depth that bridges the gap between the vegetable and spice worlds.

Culinary Notes

Oil Soluble: This is the golden rule. Paprika is fat-soluble, meaning it must be cooked in oil or fat to release its full colour and flavour. If you just sprinkle it into boiling water, it remains gritty and pale.

The Burn: Because it is made from sweet peppers, it has a high natural sugar content. It burns incredibly fast. When adding it to hot onions or fat (the pörkölt base), take the pan off the heat, stir the paprika in, and add liquid quickly to stop it scorching and turning bitter.

Storage: Paprika is highly sensitive to light. If kept in a clear jar in direct sunlight, it will turn from bright red to dull brown and lose its flavour. Keep it in the dark or a tin.

Garnish: Because it is mild, it is the perfect finishing dust for pale dishes like hummus, devilled eggs, or potato salad, adding contrast without overpowering the palate.

Health & Folklore

Exceptionally high in Carotenoids (specifically capsanthin), antioxidants which support eye health and give the spice its red colour.

Rich in Vitamin A.

Contains capsaicin analogues which may help boost metabolism, even without the spicy heat.
