The Cold Rule: Never store these in the fridge. Cold temperatures (below 12°C) permanently damage the enzyme responsible for creating the tomato's flavour and turn the texture "mealy" or "woody." Keep them on the counter in a bowl to maintain their silky interior and potent aroma.
The Umami Core: Tomatoes are one of the richest plant sources of Glutamic Acid (natural MSG). This is concentrated in the seeds and the jelly surrounding them. When making a sauce, do not discard the seeds unless you require a perfectly smooth aesthetic; the seeds are where the "savoury depth" lives.
The Peeling Trick: For a professional "Concassé" (diced tomato without skin), score a small 'X' on the bottom, blanch in boiling water for 20 seconds, and immediately plunge into ice water. The skin will slip off like a glove, leaving the sweet flesh behind.
Salt & Time: To intensify the flavour of raw tomatoes for a salad, slice them, salt them, and let them sit for 15 minutes. The salt draws out the water through osmosis, concentrating the sugars and creating a flavorful "tomato water" that makes a perfect dressing base.
