The universal solvent. In the encyclopaedia of the kitchen, water is unique: it is the only ingredient that is also a tool. It acts as the primary medium for convective heat transfer (boiling, steaming, poaching) and the solvent that extracts flavour molecules to create stocks and broths. Unlike biological ingredients (plants and animals), water provides the chemical environment in which cooking reactions—from gluten development to starch gelatinisation—take place.

Culinary Notes

Hard vs. Soft: "Hard" water contains high levels of dissolved minerals (calcium and magnesium). This toughens gluten (making it excellent for chewy breads but poor for delicate pastries) and can prevent the pectin in dried pulses (beans/chickpeas) from breaking down, leaving them hard even after hours of boiling.

The "Pasta Water" Emulsion: The starchy, saline liquid left behind after boiling pasta is a valuable by-product. It acts as an emulsifier, binding fats (oil/cheese) and liquids into a cohesive, creamy sauce that clings to the noodles.

Thermal Shock: Water has a high specific heat capacity, meaning it absorbs heat efficiently. An ice-water bath is the most effective way to "shock" blanched vegetables, instantly arresting the cooking process to lock in texture and chlorophyll (colour).

Chlorine & Fermentation: Modern tap water is treated with chlorine or chloramine. These are bactericides which can inhibit the growth of wild yeast in sourdough starters or lacto-bacteria in pickles. For fermentation, use filtered water or let tap water sit uncovered for 24 hours to off-gas.
