Their defining characteristic is a fundamentally low starch content and a correspondingly high moisture level. This unique chemical makeup dictates their entire culinary purpose: they are specifically designed to hold their physical shape and tight cellular structure under intense heat and aggressive handling, making them the direct, deliberate antithesis to fluffy, fall-apart baking potatoes.

Culinary Notes

The Mash Warning (Crucial Rule): You must never attempt to mash a waxy potato. Because they lack the dry, fluffy starch needed to absorb butter and milk, physically crushing them ruptures their dense cells and releases a specific type of starch that instantly turns the mixture into a heavy, unappetizing, and elastic glue.

The Salad Anchor: This is their true calling. When boiled whole in their skins, peeled, and sliced while still warm, waxy potatoes will aggressively absorb a sharp vinaigrette or a rich mayonnaise dressing without crumbling or disintegrating into a mushy paste.
