The Bleed Factor (Crucial Rule): Because they are saturated with pigment all the way through to the core, they will instantly dye any light batter (like a muffin or sponge dough) a dull, bruised grey if folded aggressively. To mitigate this, you must fold them in at the absolute last microsecond with a very gentle hand, or ideally, fold them in completely frozen so their juices do not have time to melt before the batter sets in the oven.
The Pierogi Mandate: In the Polish kitchen, they are the absolute non-negotiable filling for the iconic summer dish, Pierogi z Jagodami. Because they burst and release a massive amount of liquid when boiled, the raw berries must be tossed with a microscopic dusting of potato starch or fine breadcrumbs before sealing the dough. This binds the volatile juices into a jam inside the dumpling, preventing them from blowing out the seams.
The Heat Collapse: Unlike thick-skinned cultivated blueberries which hold their physical, spherical shape when baked, wild blueberries have incredibly delicate cell walls. The second they are subjected to heat, they completely melt and collapse into a thick, intensely rich, jammy compote.
The Washing Warning: They are ferociously susceptible to mould if subjected to moisture before storage. You must never wash a punnet of wild blueberries until the exact second you intend to use them. Rinse them incredibly gently in a fine sieve, as aggressive handling will instantly crush them.
