The first food. While it comes in many fat percentages (Skimmed, Semi-Skimmed), Whole Milk (approx. 3.25% - 4% fat) is the only standard for the professional kitchen. It is a stable emulsion of butterfat globules suspended in water, alongside proteins (casein and whey) and sugar (lactose). Unlike water, which is a passive liquid, milk is an active ingredient—its proteins coagulate, its sugars brown, and its fats tenderise. It is the base of the Béchamel sauce, the softener of the dough, and the richness in the custard.
