Taste Profile Sweet (Lactose), Creamy, Neutral, White, Smooth mouthfeel

The first food. While it comes in many fat percentages (Skimmed, Semi-Skimmed), Whole Milk (approx. 3.25% - 4% fat) is the only standard for the professional kitchen. It is a stable emulsion of butterfat globules suspended in water, alongside proteins (casein and whey) and sugar (lactose). Unlike water, which is a passive liquid, milk is an active ingredient—its proteins coagulate, its sugars brown, and its fats tenderise. It is the base of the Béchamel sauce, the softener of the dough, and the richness in the custard.

Culinary Notes

The Boiling Risk (Scorching): Milk contains heavy sugars and proteins that sink to the bottom of the pot. If you boil milk over high heat without stirring, these solids will burn on the bottom, infusing the entire liquid with a permanent "burnt hair" taste. Always heat milk gently and stir often.

The "Skin" Effect: When heated, milk proteins coagulate and form a tough skin on the surface. To prevent this during cooling (e.g., for a custard or pastry cream), press a sheet of cling film directly onto the surface of the hot liquid.

Acid Curdling: Milk is highly sensitive to acid. If you add lemon juice or vinegar to hot milk, the casein proteins will clump together and separate from the whey. This is a disaster for a sauce, but it is exactly how you make Ricotta or Paneer cheese.

Tenderising: In baking, the fat and protein in milk interfere with gluten formation. Bread made with milk (enriched dough) will always be softer and have a finer crumb than bread made with water.
