Unsalted Butter

Taste Profile Creamy, Sweet (Lactose), Rich, Milky, Coating mouthfeel

The bridge between milk and fat. Butter is created by agitating fresh cream until the fat globules smash together and separate from the liquid (buttermilk). However, unlike oil or lard, butter is not 100% fat. It is a stable emulsion typically consisting of 80-82% milk fat, 16-17% water, and 1-2% milk solids (proteins and sugars). This unique composition makes it the most flavourful fat in the kitchen, but also the most fragile. It is solid at room temperature, spreadable when warm, and liquid when hot—a textural shapeshifter.

Culinary Notes

The Burning Point: Because of the milk solids (proteins), butter has a very low smoke point (~175°C/350°F). If you try to sear a steak in pure butter at high heat, the proteins will burn black and taste bitter. For high heat, use oil or Clarified Butter (Ghee).

"Mounting" (Monter au Beurre): This is the French technique of whisking cold cubes of butter into a hot sauce after taking it off the heat. The butter emulsifies into the liquid, giving the sauce a glossy shine and a velvety texture. If you boil it, the emulsion breaks and you get an oil slick.

Salted vs. Unsalted: Professional kitchens almost exclusively use Unsalted Butter. This gives the chef total control over the seasoning. Different brands of salted butter have wildly different salt levels (from 1.5% to 3%), making it impossible to season a dish accurately if you use it.

Baking Lift: In cakes, creaming butter with sugar creates microscopic air pockets (aeration). This mechanical lift is what makes sponges fluffy. Melted butter cannot do this.

Health & Folklore

Vitamin A: One of the most easily absorbable sources of Vitamin A (essential for vision and immune health).

Butyrate: Contains butyric acid, a fatty acid that is anti-inflammatory for the gut.
