The fragrance of the orchid. Vanilla extract is the liquid essence of the Vanilla planifolia pod. It is created by macerating the cured, dried beans in a mixture of water and ethanol. This alcohol acts as a solvent, pulling out the compound vanillin alongside hundreds of other complex trace flavourings that give true vanilla its depth. Unlike the synthetic "Essence" (which is chemically derived from wood pulp), the Extract captures the full, earthy, floral soul of the spice rack's most aromatic player.
