A Chef's Guide to Storage & Prep

  • Toast for Transformation: Whenever possible, buy whole spices. Gently toasting them in a dry pan until fragrant awakens their dormant oils, fundamentally changing their profile from raw and dusty to deeply aromatic. Grind them only right before they are needed.
